Enjoy Homegrown Veggies All Year

Come late winter, you may be longing for delicious harvests from your home garden.  While nothing beats tomatoes straight from the vine or carrots right out of the soil, frozen produce can be a good substitute while your garden is dormant.  You may be picturing bland food from the frozen section of the grocery store, but don’t worry– quality veggies properly frozen shortly after harvest taste great.

As an added bonus, freezing is one of the easiest ways to preserve food from your garden.  Unlike with canning, there’s no need to worry about acidity levels and you can mix and match veggies or freeze small batches.  This can be especially helpful if you want to freeze bags for use in specific recipes.

This article from Mother Earth News has excellent tips to get you started:

You might consider purchasing a chest freezer as even small gardens can produce tons of great fruits, veggies, and berries, and you’ll want the option of enjoying them throughout the year.  Many newer freezer models are also very efficient and the small increase in energy usage will be far offset by reducing the number of times you need to run to the store.  Plus, you’ll know all the food you’re eating and serving your family is organic and grown using the highest standards.
