While watermelon is indeed a classic summertime garden treat, many watermelons take until the fall to ripen, presenting us with the wonderful opportunity of pairing it with a fall-grown green such as arugula that usually fails to grow in summer heat. We know this delicious Greek salad will make your mouth water for more!
Ingredients
From the Garden:
4 cups watermelon, diced and seeded
4 cups packed arugula
¼ cup mint leaves, thinly sliced
From the Pantry :
6 oz. Feta cheese, crumbled
1 cup balsamic vinegar
3 tablespoons orange juice
Kosher salt
Toasted pine nuts for garnish
Preparation
Balsamic Drizzle:
In a small saucepan over medium heat, combine the orange juice and balsamic vinegar, bringing the liquid to a simmer and reducing it by ⅔, or until the liquid coats the back of a spoon. Cool the reduction to room temperature and reserve until ready to serve.
Salad:
Combine all the ingredients in a serving bowl, toss and garnish with pine nuts.
